The Professional Chef: Co-Owner and Chef at the Chatham Carriage House Inn, Peter Varns graduated from Purdue University with a degree in Hotel & Restaurant Management and has since pursued ventures as a chef, baker and caterer from California to Massachusetts.
Peter studied food, chocolate and pastry abroad at the Ecole des Arts Culiniares in Lyon, France, and trained in several French boulangeries. A few of his former roles include Personal Chef to Boston, Detroit and Los Angeles families, Head Chef at the Bark Eater Inn in Keene New York, Pastry Chef at the Tall Timber Resort in Colorado and the Wequassett Inn in Chatham, and Galley Chef on the Motor Yacht “Aurore.”
At the Inn, you will be treated to extraordinary breakfasts featuring local, fresh ingredients sourced from our area’s abundant farmers markets. Peter refers to his breakfast entrées as rustic gourmet, allowing the true character of the ingredients to come through in a natural presentation with simple seasonal garnishes. He enjoys incorporating fresh herbs from our garden into the breakfast entrees as well as creating our unique afternoon pastry selections, many inspired by his time spent in Europe.
Some of the afternoon Inn favorites are Grand Marnier Glazed Madeleines, individual Valrhona Chocolate Barquettes with gold leaf, Austrian Linzer Cookies (Gluten-free), Decadent Dark Chocolate (Gluten-free) Brownies, Almond Macaroons (Sugar-free & Gluten-free), and Callebaut Chocolate Chunk Cookies with toasted pecans.

The World Traveler & Global Litigation Lawyer as Your Host: Co-Owner and Innkeeper, Brian O’Connor, is thrilled to have returned to the Cape & Islands where he and his family have summered for many seasons!
Brian is a practicing global litigation attorney who graduated from the University of Virginia Law School and is an avid collector of 18th and 19th Century American furnishings, nautical antiques, and coastal New England Folk Art, much of which is on display in the main building of the Inn.
Brian has had a career as an international consumer industry executive as well which enabled him to travel extensively for 20 years to Asia-Pacific, Africa, Europe and Latin America ensuring global consumer satisfaction. Brian has also lived in the UK and Australia. He enjoys meeting our guests from diverse cultures and backgrounds and ensuring they are each able to make the most of their stay on Cape Cod.
He looks forward to welcoming the Inn’s guests from across the globe to Chatham and the Inn, a world class vacation destination!
